Coffee Energy Bites: No-Bake Recipe

These little Coffee Energy Bites are packed with healthy fat, fibre, and protein.
Easy-to-make, delicious, vegan, and refined sugar-free!
A nutritious quick morning snack or afternoon pick-me-up, and a great option for satisfying that sweet tooth on-the-go. Oh! They also pair perfectly with a cup of coffee!
Ingredients
1 cup mixed nuts
2 cups quick oats
1 cup pitted dates
1 cup dark chocolate chips
2 tbsp ground coffee (or adjust to taste)
1 cup chunky peanut butter
1 tbsp vanilla extract (or adjust to taste)
1/3 cup maple/golden syrup
Instructions
Mix all the dry ingredients using a food processor or a blender for around 30 seconds.
Add the wet ingredients: crunchy peanut butter, vanilla extract, the syrup and give it another blend.
Put the mixture in a bowl and start rolling it with your hands into size bites.
That's it, coffee energy bites are ready to eat!
Keep them in the fridge or freeze for later.
Tip: Add extra flavours rolling the balls in different toppings. Our suggestions: chia seeds, cocoa powder, poppy seeds, dissected coconut, chopped hazelnuts, ginger and cinnamon.
